Abstract: Information on how to buy, store, thaw, stuff and prepare turkey is presented. Prepared by USDA's Food Safety and Inspection Service (FSIS), Meat and Poultry Division, this booklet for first-time cooks discusses in 8 chapters the elements of buying and serving the perfect turkey. Included are how to buy either a fresh or frozen turkey that is the right size, how to thaw and wash the bird, how to stuff and roast it, how to carve the turkey, set up a buffet for entertaining, store leftovers and prepare stuffings, gravies or leftovers.
